Gallo Pinto (beans and rice)

3 cups day old cooked white rice2 cups cooked black beans1/4 cup finely chopped raw onion1/2 cup chopped fresh bell or sweet red peppers2 tbsp fresh cilantro, chopped3 tbsp canola oil2 tsp Worcestershire sauceTabasco sauce, optional, to taste
Saute pepper and onion in oil on medium heat. Add beans and cook 2 minutes longer. Add rice and mix, cook 3 minutes more. Add Worcestershire sauce, cilantro and tabasco if desired. Mix well. Makes 4 servings, about 1 and 1/4 cup each. Garnish with favorite salsa.
Serving suggestions: great for breakfast with any style eggs, or as a side dish with meat and vegetables.
