Ingredients
1 c. 100% whole wheat flour3/4 tsp. baking sodadash salt1/2 c. plus 1 tbs. unsweetened cocoa powder2/3 c. Splenda (or adjust to your taste)1/2 c. prune puree (I used Gerber baby prunes)1/3 c. plain or vanilla yogurt1 tsp. vanilla extractabout 1 tbsp. vanilla sugar (made from either putting a vanilla bean in with your sugar and letting it sit, or pulverize a bean with your sugar in a food processor or blender.) I just put a couple of drops of vanilla extract in with the sugar because vanilla beans are VERY expensive.
Directions
Preheat oven to 350 degrees. Spray 2 baking sheets, or cover them with parchment paper or silicone baking mats.
_____________________________________
Mix flour, soda and salt together and set aside.
_____________________________________
In a medium mixing bowl, mix prune puree with 2/3 c. sugar and cocoa, stir to combine. Add yogurt, vanilla, and balsamic glaze, stir and mix well. Add flour mixture and stir until just combined, don't over mix.
______________________________________
Drop tablespoons of dough onto baking sheets about 1 1/2 in. apart. Using back of spoon, flatten each cookie slightly and sprinkle with vanilla sugar.
______________________________________
Bake for 9-11 minutes - be careful not to burn the bottoms!

Remove from oven and allow to cool completely. These taste best cold, and even better the next day.
