Pen's Chili -1- +full cup

Ingredients
4 -l bs of lean gr. beef4 - lg celery stalks -chopped1- lg onion -chopped2 - 28 oz. cans of crushed tomatoes1 cup shredded carrots1 lg can of red kidney beans1 tsp minced garlic1 tbs red pepper flakes1 tsp black peppera pinch of cayanne pepper1 tsp Garlic 1 tsp Salt 1 tsp Pepper, black
Directions
Brown beef in lg pot
Add onions cooking for a few minutes
Add remainder of ingredients
Bring to a boil, stiring occationally
Then simmer for at least 1 hr. - longer is better
Next day is best

    ONe word...YUMMY, I have been lucky to have been served this very chili several times!! The kids love it too, especially if you serve it with grated cheddar cheese, sour cream and nacho chips. *note, I prefer baby carrots cut up instead of the shredded carrots. - 4/23/09

    we like to use ground turkey instead of beef for a more lean version. we also leave out the mushrooms for our fussy teenager that lives in the house. :o) - 4/29/09
