Teriyaki Chicken Stir-Fry

Ingredients
6 tbsp teriyaki marinade400g diced chicken1 tbsp sesame oil1 green chilli - sliced with seeds2 tsp garlic puree / 2 crushed garlic cloves1 medium onion - chopped in wedges1 zucchini - sliced5 medium mushrooms - chopped100g baby corn - chopped in 350g mangetout1 carrot - sliced in ribbons using peeler
Directions
1. Marinade the chicken in the teriyaki sauce for at least an hour.
2. Heat sesame oil and remove chicken from marinade before frying for a 3-4 minutes until browned.
3. Add chilli and garlic and continue frying over a medium high heat for 2 minutes.
4. Add onions and fry for a further 3 mins. Add marinade from chicken (throughout cooking) to prevent drying out.
5. Add the courgettes, and baby corn, fry for 2 mins.
6. Add mushrooms, mangetout and carrots and continue frying for a further 2 mins.
7. Serve immediately.
