Guilt Free Apple Coffee cake

Ingredients
2 1/2 cups sifted whole wheat flour1 1/2 tsp baking soda1 tbsp.ground cinnamon 2 eggs, beaten1 tbsp.vanilla extract1/2 cup chopped pecans 1 cup raisins 1 cup Splenda 1/2 cup plain lo fat yogurt 5 cups cored and chopped Granny Smith apples 1 Granny Smith apple peeled, cored and pureed
Directions
1. Preheat oven to 350 F
2.lightly oil or spray 13x9x2 inch pan
3. Combine chopped apples,Splenda,raisins and pecans in large mixing bowl and let stand
4.sift together flour, soda and spices then stir in pureed apple, vanilla and eggs. Pour this over the apple mixture a little at a time until thoroughly mixed. The mixture will be somewhat dry.
5. Pour batter evenly into the pan and bake30-35 min. Serve while still warm.


Yeild 20 servings 3 1/2 x2 1/2 inches each.

    The measurements are definitely off, had to add extra yoghurt just to get everything to mix. Also the recipe says yoghurt but its never mentioned in the procedure again. Cakes still in the oven but doesn't look like it will turn out too well. - 4/28/15
