3/4 c. vegetable oil1 1/2 c. shredded carrots2/3 c. raisins1/2 c. unsweetened apple sauce4 large egg whites1 c. soy flour1 tsp. baking powder1/2 tsp. salt1/4 tsp. nutmeg1 tsp. cinnamon1 c. splenda1 tsp vanilla
Preheat oven to 350. In a large mixing bowl combine oil, carrots, raisins, applesauce and egg whites. Mix well. Add flour, baking powder, salt, nutmeg, cinnamon, splenda and vanilla. Mix well. Spray 8x8 pan with cooking spray. Pour into pan. Bake for 35 to 40 min, or until toothpick inserted comes out clean. Cool on wire rack.

I love this more than "real" carrot cake! I had RNY but this is a yummy healthier dessert for anyone wanting no sugar and no gluten - tysm for sharing this; I am in sweet heaven! Changes I made: walnuts instead of raisins & rice flour instead of soy flour & I added sugarfree frosting. - 8/15/12
