Italian Bruchetta

Ingredients
Bread:8 slices Italian Bread2 tbsp Fresh Rosemary1 tsp Garlic PowderOlive OIl SprayTopping:8 slices Fresh Mozzarella1 Medium Tomato2 tbsp Fresh Basil Pinch of SaltVinegrette:3 tbsp Balsamic Vinegar1/4 cup Extra Virgin Olive Oil1 tsp Dijon Mustard1/4 tsp Salt1/4 tsp Fresh Ground Pepper
Directions
Preheat the Broiler. Cut the Bread into eight slices about 1/2 inch thick. Cut each slice into 4 1/4 inch slices. Spray with Olive oil Spray. Finely chop rosemary. Sprinkle with Garlic Powder and Rosemary. Toast under the broiler until golden brown, about 3-4 minutes.

Thinly slice Tomatoes into small pieces to fit on bread. Slice Mozzarella in same fashion. Chop basil into small pieces.

Combine ingredients for vinegrette and whisk until oil and vinegar are emulsified.

Top bread with tomato, mozzarella and basil. Spoon a small amount of vinegrette on to the top and enjoy.
