Whole Wheat Batard Bread

Ingredients
4 Cups Whole Wheat Flour1/2 Tbsp Salt1/2 Tbsp Butter2 tsp Sugar1 tsp Yeast1 1/4 cup hot Water1 tsp. Baking Soda
Directions
Makes 1 loaf
Heat oven to 375 degrees
Mix dry ingredients except the yeast and sugar
Use 1/4 cup hot water and sugar to grow yeast
When yeast is bubbly add to dry ingredients with the rest of the flour and water.
Knead until smooth.
Let rise for 1-1.5 hours (double in size)
Punch down and shape on baking surface, use cornmeal to keep dough from sticking to baking surface.
Brush with beaten egg white if desired.
Bake for 20 minutes.

Cool on wire rack, eat.
