Veggie Medley Pasta Salad

Ingredients
Directions
1 box of whole wheat or protein packed rotini pasta1 bag of organic baby carrots, chopped1 bunch of organic celery, chopped2 large organic red bell peppers, chopped1 package of organic cherry tomatoes, halved1 large red onion, chopped1 bag organic broccoli, coarsely chopped1/2 jar of olives (any variety, pitted)1/2 bottle of light italian dressing2 quick shakes of fresh parmesan cheeseOptional add in: artichoke hearts
Follow directions on pasta package to cook pasta. Chop veggies and toss with pasta in a large bowl (or two). Add dressing and parmesan and toss again. Refrigerate at least 1 hour before serving.
