Chicken Quesadillas

1 Low Fat whole wheat tortilla3 oz southwest seasoned chicken breast (oscar mayer)1/4 cup fat free shredded cheesecooking spraycreole seasoning (or other mexican spice)
1. Heat a non-stick griddle or pan and spray it with cooking spray, place tortilla on the griddle
2. layer half of the tortilla with about half of the cheese
3. chop up the chicken into small pieces and layer it on the cheese
4. layer the rest of the cheese over the chicken and fold the tortilla over the top (in half)
5. if using seasoning sprinkle it on the outside of the tortilla (you could also put it in the cheese and chicken mix)
6. let the tortilla get golden on that side, and then flip it and allow the other side to toast
7. serve with sour cream or salsa - these are also great with some peppers chopped up in them
