Southwestern Omlet Wrap

2 tsp. cornstarch1 Tbsp. water1 large egg3 Tbsp. fat free refried beans (warm)1 Tbsp. bacon bits1/4 c. shredded 2% Cheddar cheese2 Tbsp. chunky salsa1/2 c. shredded lettuce
To make omlet: Dissolve cornstarch in water in a small bowl. Add egg and whisk until blended. Heat a large non-stick skillet over medium-high heat. Add egg mixture tilting skillet to cover the bottom. Cook 1-2 minutes or until set. Turn omlet over and cook an additional 30 seconds. Turn out onto a plate, browned side down.
To make wrap: Spread beans to edge of cooked egg. Sprinkle evenly with bacon cheese, salsa and lettuce. Gently roll up, sealing with refried beans. Serve immediately or wrap in plastic wrap and refrigerate. Makes 1 serving
