Grilled herbed Chicken

2 chicken breasts with no skin, each sliced into 4 piecesHalf an onion - red if you can get it - cut into quarters then broken into layersLemon zest grated off the lemon, and the juice squeezed outI clove garlic crushed1 tablespoon of Rosemary leaves (fresh if pos)I tbspn parsley or cilantro (fresh)1 tbspn Olive oil
This makes an easy dinner for two.
Put the chicken and onion into a bowl and add all other ingredients. Cover and leave for about half an hour.
Heat grill or barbeque. Thread chicken, then onion layer then chicken etc on to 2 skewers. Give them a grinding of pepper then grill for 20 mins, turning and basting with the marinade juice.
Serve with pasta or rice or couscous and salad.

We loved it! I made it on my indoor grill so I didn't use spears, just grilled directly on the grill. I used about twice the recomended fresh cilantro, rosemary, and parsley from my herb garden. I served it on whole grain couscous with a side of garlic roasted asparagus. It was a great dinner! - 6/19/07
