5 cups Low Sodium Vegetable Broth3 Carrots, diced3 large Celery stalks, sliced1 large Onions, chopped4 cloves Garlic, minced1 tsp dried crushed Basil1/2 tsp dried, Oregano1/4 tsp Pepper1 -15 oz can red kidney beans, drained and rinsed1 - 15 oz can diced Tomatoes, no salt 2 cups diced Zucchini1/2 cup Macaroni, whole-wheat
In large sauce pan combine broth, carrots, celery, onion, garlic, basil, oregano, and pepper. Bring to a boil, reduce heat, Cover and simmer 15 min.
Stir in beans, tomatoes, zucchini, and macaroni. Return to boiling, cover and reduce to simmer 10 min or until veggies are tender. Makes 10-1 cup servings.
