Chicken and broccoli cassarole

Ingredients
1lb chicken breast meat, diced into 1" cubes2 cans cream of mushroom soup2 cups nonfat milk1 cup reduced fat cheddar cheese2 cups chopped broccoli (you can use frozen but fresh is the best)2 cups Kraft Minute Rice (Brown if you can find it)salt and pepper
Directions
combine chicken, soup, rice,milk, broccoli and salt and pepper in large bowl with 1/2 cup of the cheese. stir to combine. Pour into 9x13 baking pan and top with remianing cheese. Bake at 375 for 40-50 minutes until chicken is done. Serves 8

    This looks really good - I'm going to have to give it a try. I think I will substitute long grain brown rice for the white rice though - those whole grains stick with me longer than the white carbs. - 3/26/07
