Millet Cauliflower Mash

Ingredients
1 cup millet2 cups chopped cauliflower2½ cups water½ teaspoon saltParsley to garnish
Directions
Wash millet, wash and chop cauliflower, and place both in a medium sauce pot.

Add water (or stock) and bring to a boil; add salt, cover, and turn down to a simmer for 20 minutes, until millet is soft.

When done, use a potato masher and blend together.

Sprinkle with chopped parsley to serve.
