Mexican Shredded Beef

Ingredients
1 (9oz) pkg of stew meat2 packets of taco seasoning (try to use low sodium)2 cups water
Directions
Brown 1 pkg of stew meat (approx 9 oz). Add 1 1/4 cups of water. Add 2 pkgs of taco seasoning (try to use low sodium). Bring to a boil and then simmer in a covered pot for 1 hour.

I forgot and let it simmer for 2 hours!

After the mix has cooled enough to handle safely, seperate the meat from the liquid with a slotted spoon. Put the meat in a blender ( I use a magic bullet knock off by sunbeam) and add liquid to cover. Make sure to leave head room. Blend for 15 seconds. Add liquid as needed to achieve desired consistency.

Use a small spatula to remove the mix as it will be very thick.

This makes approx 8-10 servings. I only used 2 tbsp filling in my burrito.
