Using no canned ingredients, this Chili recipe is great for those on a low sodium diet. Delicious on a bed of lettuce with a tbsp of sour cream and a little picante sauce. Ingredients

    1 lb. ground chuck
    1 large onion, chopped
    2 - 3 JalapeƱo peppers, seeded and chopped
    2 cups of soaked and cooked red kidney beans
    3 cups of stewed tomatoes, skins removed
    1 tbs chili powder
    1 tsp powdered cumin
    1 tbs cilantro
    3.5 oz dry red wine

Directions

In a large pot, combine ground chuck, onion and peppers. Cook on medium until beef is well browned and vegetables tender. Add beans, tomatoes and spices. Bring to a simmer and add wine. Cook on low for 40 minutes.

Makes 7 one cup servings.

    Very Good
    I made this last night and it was so good! I tried to eat 2 cups and was so full by the end I wasn't able to.
    I was a little confused by the lack of liquid, so I added 1 cup of water and that seemed to do the trick.
