Ingredients

    Ground beef, extra lean, 16 oz
    Yellow Sweet Corn, Canned , 1 can (12 oz) drained
    Del Monte Diced Tomatoes, No Salt Added, 1 cup with liquid
    Green Peppers (bell peppers), 2 tbsp
    Taco Seasoning Mix, 6 serving (remove)
    Corn Bread Mix prepared, 6 serving (remove)
    Green Chili Peppers, canned, 0.5 cup with liquid

Directions

Preheat oven to 400 degrees
Brown the beef over medium heat. Drain
Mix in the tomatoes, peppers, and corn, and cook 5 minutes. Stir in the taco seasoning Bring to a boil, reduce heat to low, and continue cooking 5 minutes
Transfer to the prepared baking dish.
Prepare the cornbread mix according to package directions. Spread evenly over the top.
Bake 20 minutes

    Thanks for sharing! I used chicken and added: black beans, celery, red and yellow bell peppers, zuccini, shredded carrots, and substituted my own taco seasoning. Will definitely make again! - 7/29/09

    THIS WAS AWESOME added 2 cans of diced tomatoes and chilies in place of diced tomatoes and used 1.5 pounds of lean ground beef - 5/5/15

    This was delicious. I wasn't sure what size pan to use-but I made do. Added a lot more veggies and used tukey instead of beef. Glad I have leftovers! :) - 1/16/10
