A blend of italian turkey sausage and ground chicken with vegetables. Each piece has about 7 Weight Watchers points.
Based on food.com turkey meatloaf (8803) recipe.
Adapted from a recipe I found in a Biggest Loser cookbook - I pumped up the veggies to make it even more filling!
I use a large muffin tin rather than the smaller ones used for cupcakes. Ingredients listed here make 6 nice large mini meatloafs. The feta cheese, spinach and mushrooms create a wonderful mix of flavor.

My mom's meatloaf always called for 1lb of ground beef, 1 egg, 1 sleeve of saltines, and 1 can of cream of mushroom soup... delicious, but not exactly healthy! This recipe is my healthy take on "Mom's Meatloaf".
Based on a recipe I found here. I substituted ground chicken for the beef/turkey it called for. Also, I substituted Egg Beaters for the egg.
