Introduction

Based on a recipe I found here. I substituted ground chicken for the beef/turkey it called for. Also, I substituted Egg Beaters for the egg. Based on a recipe I found here. I substituted ground chicken for the beef/turkey it called for. Also, I substituted Egg Beaters for the egg.
Number of Servings: 6

Ingredients

    1lb Ground Chicken
    1c Brown Rice
    1/2 c Egg Beaters
    3/4 c Greek Yogurt, plain
    1/2 c Chopped Onion
    1/2 c Chopped Celery
    1/2 c Chopped Pepper (and will work, I used roasted red peppers).
    1 tsp Salt
    1 tsp Basil
    1 tsp Oregano

Directions

Cook the brown rice in 2 to 2 1/2 cups of water (depending on how wet you like the rice...I used 2)

Mix the rice and all of the other ingredients in a large bowl.

Put the mixture into a loaf pan that has been coated with cooking spray.

Cook for 60 minutes at 350 (I covered it for the first 45 to keep the top from getting too dark).

Let stand 10 minutes before cutting.

Eat. Enjoy!
