Introduction

My mom's meatloaf always called for 1lb of ground beef, 1 egg, 1 sleeve of saltines, and 1 can of cream of mushroom soup... delicious, but not exactly healthy! This recipe is my healthy take on "Mom's Meatloaf". • Everyone loved it. They said it was better than my ground beef meatloaf. My nephew was excited about eating the "meat muffin." - 9/25/12

  • I added a tsp of thyme, but otherwise followed the recipe. They are delicious and freeze well. Next time I might even add cranberries for a little sweetness. - 11/18/11
