Introduction

Number of Servings: 4

Ingredients

    2/3 cups old-fashioned oats
    1/2 cup skim milk
    4 T Frank's Red Hot Sauce
    1 pound ground chicken breast
    1/2 cup finely chopped celery
    1 cup chopped carrot
    1/4 cup finely chopped sweet onion
    2 large egg whites, slightly beaten
    1/2 cup crumbed reduced fat blue cheese

Directions

Preheat oven to 350 degrees. Spray a loaf pan with cooking spray.

Combine the oats and milk in a large bowl. Let them sit for 5 minutes. Stir in 2T of the hot sauce. Add the ground chicken, celery, carrot, onion, and egg whites. Using a fork or clean hands, mix the ingredients well. Add the blue cheese and mix to combine.

Transfer the mixture intothe prepared pan and spread out so top is flat. Spread remaining 2T of hot sauce on top.

Bake for 40 minutes or until the chicken is complete set and not pink.

Makes 4 servings. One serving is 1/4 of the meatloaf.
