Introduction

A great slow cooker week-night dinner. A great slow cooker week-night dinner.
Number of Servings: 4

Ingredients

    1 lb. pork tender loin, trimmed
    2/3 c. salsa
    juice of 1 lime
    juice of 1 orange
    juice of 1/4 grapefruit
    1 can kidney beans, rinsed and drained
    8 6-inch tortillas, warmed
    1/4 c. sour cream

Directions

Brown pork on all sides over medium high heat. Add salsa and citrus juices to small crock pot. Place pork on top, turning to coat. Cook on low heat for 6-7 hours, till pork is easily shredded. Shred pork with 2 forks, then stir in beans. Spoon into tortillas and top with 1/2 T. sour cream.

Serves 4 as a main dish (2 carnitas per serving).

    I wasn't as excited as everyone else about these. Hubby thought that they were pretty good. Not sure that they will be on the menu that often. Needed a bit more flavor or something... - 2/2/09

    Instead of serving in a tortilla, I served over rice which wasn't bad. Used black beans instead of kidney and left out sour cream. Added in some hot banana peppers. Overall tasty but would taste better in a tortilla than over rice. - 1/26/14

    Excellent! I used equal parts lime & lemon juice, 1 tsp dried red pepper flqakes, 1/2 c fresh chopped red pepper, & a little sprinkle of the jalapeno pickled peppers for a spicy version. My husband got hungry & ate some before I shredded & added the beans. He loved the flavor! - 7/7/10
