Ingredients:4 (10-inch) flour tortillas1 tbsp. canola oil1 large onion, diced1 jalapeno chile, seeded and minced (next time try 2 tbsp of can)2 cloves garlic, minced1⁄2 tsp. ground cumincoarse salt and ground pepper2 (15-oz.) cans black beans, drained and rinsed12 oz. beer, or 1 1⁄2 cups water1 (10-oz.) package frozen corn4 scallions, thinly sliced, plus more for garnish8 oz. shredded Mexican cheesesour cream and salsa, for serving

te-tortilla-and-black-bean-pie. It's pretty good, but I modified it to use olive oil, whole wheat tortillas, fresh tomatoes, less water, and more jalapenos. It's a huge hit at our house, and changes nearly cut the calories in half. - 10/19/09
