tofu - veggie burgers

Ingredients
1 block of Trader Joe's original tofu (19 oz)parsnip, grated 1/2 cupzucchini, grated 1 cupcarrot, grated, 2 cupmushrooms, grated 1.5 cup2 eggs1 onion3 cloves garlicolive oil, 2 tablespoons2 scallionswhole wheat matzo meal or bread crumbs 1/2 cup (I had no bread crumbs, so I used leftover matzo meal)Should have salt to taste, but I forgot!!! and sprinkled on while cooking
Directions
Saute onion and garlic in olive oil.
I used frozen tofu which I defrosted that morning.
grate veggies and tofu.
Beat eggs and add.
Add scallions (parsley OK too)
Add matzo meal (or preferably bread crumbs)

I made this into 9 patties.
However, it didn't stick together very well and could possibly have more bread crumbs or grated cheese to hold it together. We left out cheese for dietary reasons....
