Wheat dough for pizza crust, bread sticks, flat bread and soft pretzels

Ingredients
1-1/2 C unbleached white flour (set aside 1/2 C for kneading in)1 C whole wheat flour1-1/2 tsp salt2 tbsp sugar or splenda (it won't rise quite as much if you use Splenda)(for soft pretzels only, I add 1/4 dried milk to the dry ingredients, and a tablespoon of vegetable oil to the hot tap water)3 tsp Rapid Rise yeast1 C very hot tap water (at least 110 degrees)
Directions
-In mixer, blend 1 C flour, 1 C wheat flour, salt, sugar and yeast. Pour in water and blend until mixed. Add enough extra flour to make the dough soft but not sticky.
-Set mixer to knead and knead for 2 min.
-Knead by hand a few strokes.
-Let rise 10-15 min.

Sprinkle a pizza stone with corn meal. Pizza crust dough and top with sauce, mozzarella cheese, and favorite cooked meats and/or veggies. Bake in 425 degree oven for 10-12 min.

For thin crust: add only 1-1/2 tsp yeast and divide dough in half. Do not let it rise. You'll get two crusts.

For breadsticks:
After full-yeast dough rises, divide dough into 5 to 8 balls. With palms of hands, roll each ball into a stick the size you like and place on greased cookie sheet or ungreased pizza stone. Spray with spray butter and sprinkle with garlic salt. Bake in 425-degree oven for 8 min.

For flat bread;
Use only 2 tsp of yeast. After dough rises, divide into 5 equal balls. With rolling pin, roll each ball into a circle 6-7 inches in diameter (or size you like). Fry each bread circle in a skillet, heated to medium, just a couple minutes on each side. Dough should bubble slightly.
NOTE: flat bread tastes great when you add a little sun-dried tomatoes to the dough when mixing it.

Spread ranch dressing (or your favorite) on flat bread, add cooked meat, cheese and spinach (or other veggies), and bake in 350-degree oven for 5-8 min.
