Introduction

Ingredients

    1 lb. frozen (defrosted) or fresh shrimp
    5 cloves garlic or to taste
    1/8 cup olive oil
    2 tbsp parsley plus more for garnish
    juice of 1 lemon plus lemon wedges for serving
    salt and pepper to taste (nutrition info has 1 tsp of each)

Directions

Warm olive oil over low heat. Add garlic and saute until golden. Turn heat to medium high. Add shrimp, salt, pepper, and parsley. Turn the shrimp when the bottom side is pink. Cook on second side until pink on the outside and opaque throughout (cut one open to check), about 10 minutes. Then add lemon juice and cook 30 seconds more. Remove from heat and serve right away with more parsley and lemon wedges.

    Tastes okay. I ended up adding a small amount of butter to make it more like traditional scampi. Just about a Tbsp and it was delicious. - 5/15/17

    Only thing I do a bit different is to add some red pepper flakes to this whilst cooking! Other than that, its awesomeeeee!
