Beef Tenderloin Pepper Steak

1.5 lbs beef tenderloin cut into bite size strips1 green pepper cut into strips1 red pepper cut into strips1 yellow pepper cut into strips1 large onion chopped2 stalks of celery chopped3 roma tomatos cut into 8 wedges each1 C. sliced fresh mushrooms3 cloves of garlic crushed1 T oil1/4 C soy sauce1 tsp salt1/2 tsp pepper1/4 c cornstarch
In a large frying pan
Saute onion and garlic in oil
Add tenderloin pieces and brown
Add 3 cups of water
Simmer about 10 min
Add all other vegetables except the tomatoes and cornstarch.
Simmer for 15 min.
While meat mixture is simmering, prepare rice
Mix cornstarch with 1/2 C of water (add more if needed to get a smooth thick liquid consistancy. Slowly add mixture to meat and stir until sauce thickens.
Remove from heat and add tomatoes.
Serve over rice (not included in nutritional info)
