Balsamic-Glazed Lamb Chops

Ingredients
8 lamb rib chops, cut 1 inch thick1/4 tsp salt1/4 tsp black pepper1/2 cup balsamic vinegar1/4 cup honey4 tsp reduced-sodium soy sauceFresh rosemary sprigs (optional)
Directions
1) trim fat from chops. Season chops with salt and pepper. Place chops ina plastic bag set in a shallow dish. In a small bowl stir together balsamic vnegar, honey, and soy sauce. Pour over chops; seal the bag. Marinate in the refrigerator for at least 4 hours or up to 24 hours, turning the bag occassionally.

2) Drain lamb, reserving marinade. Pour marinade into a heavy small saucepan. Bring to boiling; reduce heat. Boil gently, uncovered, about 12 minutes or until reduced to about 1/3 cup; set aside. (Glaze will thicken as it cools. If it gets too thick to brush, reheat over low heat.)

3) Place chops on the rack of an uncovered grill directly over medium coals. Grill to desired doneness, turning and brushing once with glaze halfway through grilling. (Allow 12-13 minutes for medium-rar doneness {145} or 15-17 minutes for medium doneness {160}). Discard any remaining glaze. If desired garnish with rosemary sprigs.
