Super Yummy Garden Burger Wrap

Ingredients
1. garden "burger" patty (I used Morningstar Farms Vegetable Patty)2. tortilla shell (I used La Tortilla Factory)3. About a cup of fresh, washed spinach4. 8 cherry tomatoes, cut lengthwise5. 2 tsp Dijon mustard6. a dash of salt and pepper
Directions
(Makes one wrap)

1. Cut tomatoes and rinse spinach, set aside to dry.
2. Grill garden "burger" patty approximately 3 minutes on each side.
3. You could grill the tortilla shell to really make it exciting, I put mine in the microwave for about 20 seconds, just to warm it up and make it soft.
4. Layer spinach and tomatoes on heated tortilla shell. Sprinkle with salt and pepper.
5. Slice grilled garden burger into strips, laying on top of the veggies on the tortilla.
6. Squirt dijon mustard (or spread, whichever you have) onto the burger and veggies. You could also use regular yellow mustard, but the dijon was really good!
7. Fold in half, or however you like your wrap folded.

This wrap is very filling, nearly fat free, and full of flavor! I ate mine without any sides, but I bet it would be delicious with some fresh veggies and hummus. ENJOY! :)

    This was a great twist on a veggie burger and a wrap! I used romaine lettuce instead of spinach, and added a dab of light mayo. I later tried mixing up the ingredients, too, like adding guacamole or sprouts, both of which tasted awesome on there. Thanks for the fresh idea! - 10/30/09
