Ingredients
Garlic, 2 clovePotato, raw, 2 small (1-3/4" to 2-1/2" dia.)Red Ripe Tomatoes, 1.50 medium whole (2-3/5" dia)Beans, white, 1 cup
Directions
Chop up the potatoes and tomatoes. Throw everything in a skillet and simmer until potatoes are tender.

    I think it turned out great. I'm eating it now. One note, my beans were canned, so there may be a bit of discrepancy on the sodium content.
