Grilled Corn, Tomato, & Avocado Salad

2 1/2 c grilled corn (3-4 ears)2 scalliions, chopped1 jalapeno pepper, seeded and minced1 avocado, diced1 c grape tomatoes (whole or halved)1/4 c Cilantro, choppedLime zest from 1 limeLime juice from 1 lime1 Tbsp Olive Oil1/4 tsp Kosher SaltPepper to taste
Grill corn on cob until tender with grill marks. Let cool. Cut corn from cob. Mix with scallions, jalapeno, avocado, tomatoes, cilantro, and lime zest.
Whisk together the olive oil, lime juice, salt and pepper. Drizzle over corn mixture and mix well.
Chill.
Eat plain or serve over bed of salad greens.
Makes 6 1/2-c up servings.
