6 tomatoes1 can corn1 can black beans1 large cucumber1 large bell pepper1/2 red onion1/4 cup cilantro1/4 cup balsamic vinegar1 tabelspoon olive oil1 cup Low Sodium V81 teaspoon ground cumin1/2 tabelspoon salt
Makes about eight one-cup servings
Dice all fresh vegetable ingredients and combine.
Add the can of beans and the can of corn.
Add olive oil, balsamic vinegar, salt and cumin.
Add the spices to your taste. Cayenne pepper is also a great kick to this recipe.
