2# bag frozen cauliflower, thawed4 tsp shredded dill pickle6 tablespoons light mayo2 tsp minced onion1 tsp prepared yellow mustard1 tsp vinegar1 tsp minced celery1 tsp minced carrot1/4 tsp dried parsley1/4 tsp black pepper1/2 tsp salt
Thaw and drain the cauliflower. Chop to bite-sized pieces. Combine the remaining ingredients in a medium bowl and mix until combined. Combine cauliflower with dressing. Cover and chill 4 hours or overnight. Makes 16-1/2 cup servings.
