Williams Sonoma-Mayo Clinic Green Herb Sauce

Ingredients
1 cup (1 oz) chopped Italian parsley2/3 cup (6 oz) soft (silken) tofu1/3 cup coarsely chopped fresh chives, or 2 tsp dried chives2 garlic cloves, coarsely chopped1/4 cup (1 oz) grated Parmesan cheese1/4 teaspoon salt
Directions
In a blender of food processor, combine all ingredients, scraping the side of the bowl once or twice, until sauce is smooth and pale green.

Serve immediately, or refrigerate up to two days. It also freezes well!
