Arugula and Pear Salad with Toasted Walnuts

Ingredients
1 Tbls minced shallots2 Tbls extra-virgin olive oil2 tsp white wine vinegar1/4 tsp salt1/4 tsp Dijon mustard1/8 tsp freshly ground black pepper6 cups baby arugula leaves2 Bosc pears, thinly sliced1/4 cup chopped walnuts, toasted
Directions
Combine first 6 ingredients in a large bowl; stir with a whisk. Add arugula and pears to bowl; toss to coat. Place about 1 1/2 cups salad on each of 4 plates; sprinkle with walnuts Yield: 4 Servings
