High Fiber Stove Top Chicken Parmesan

3/4 cup all bran extra fiber cereal2 tablespoons grated Parmesan cheese1 teaspoon dried parsley1 tablespoon dried basil leaves1/2 teaspoon garlic powder1/4 teaspoon coarse ground black pepper2 boneless skinless chicken breasts, cut in half1 tbs extra virgin olive oil (you may need a little more or less - but just enough for a very thin coating)1 cup Hunt's Garlic & Onion spaghetti sauce1/2 cup shredded mozzarella cheese
Blot dry your chicken breasts so the
coating will stay put.
Pulse the fiber cereal, Parmesan, parsley, basil, garlic powder & pepper in your food processor or blender until it looks like bread crumb consistency.
Pour into a pie pan or other shallow dish.
Brush both sides of the boneless skinless chicken breast or thighs lightly with olive oil.
Lay the oiled chicken in the coating, turn and
press down a bit to make sure it sticks well.
Brown the coated chicken in a skillet sprayed with a little non-stick spray. Once they are finished, pull them out to a plate add the tomato sauce to that same skillet.
Use a wooden spoon to gently 'scrape' the pan to get any coating yum that was left behind & incorporate it into the sauce.
Once the sauce is heated, add the chicken to the sauce and sprinkle 1/8 cup shredded mozzarella on each piece. Put on the lid until the cheese melts.
Makes 4 servings.
Goes well served over whole wheat pasta with a salad on the side.
