Quinoa, Black Bean and Mango Salad

Ingredients
1 cup water1/2 cup quinoa, well rinsed1 tsp olive oil1 Tbsp lime juice1/4 tsp cumin1/8 tsp cayenne pepper1 Tbsp minced scallions1 Tbsp chopped cilantro1/4 cup green onions1 15 oz can Black Beans, rinsed and drained1 ear fresh corn, kernels removed (or 1 cup canned corn)1 sm tomato, chopped3/4 cup chopped bell pepper: red, yellow and organge1 cup chopped mango
Directions
In a saucepan, bring water to boil. Add quinoa, cover and simmer on low heat until water is absorbed. (10-15 minutes) Cool.
In small bowl, combine olive oil, lime juice, cumin, cayenne, scallions and cilantro.
In large bowl, combine cooled quinoa, green onions, beans, corn, tomato, bell pepper and mango.
Add olive oil mixture to quinoa mixture and toss gently. Season with salt and pepper. Cover and refrigerate until cool.
