Curried Lentils

Ingredients
1 cup dried Lentils4 cups water3 Tblsp Curry powder1 chopped Sweet Potatoe2 chopped Leeks3 stalks chopped Celery1 Tblsp minced Garlic
Directions
Take 1 cup dried Lentils, rinse, add 4 cups water and 2 Tblsps curry powder.

Clean and chop sweet potatoe, leeks, and celery. Add to Lentils along with 1 Tblsp chopped garlic.

Bring soup to a boil and turn down to simmer. Continue to simmer for 20 minutes or until done.

Serve alone or over rice or Quinoa.
