Bree's Spanish Rice

Ingredients
2 Cups long grain white rice1 Tbl Olive Oil1/2 medium onion: slices1.5-2 cloves of garlic: diced or minced3 Cups chicken broth1 Tbl Tomato Paste.5-1 cup watersalt and pepper to taste
Directions
Coat a pan with the olive oil and heat over medium high heat. Add the onions and saute lightly. When the onions are soft and pliable add the garlic. Cook for a minute or so more to soften the garlic but not burn it. Add the rice to the onions and garlic. Stir until all fully incorporated. Continue to cook until the rice is slightly browned. You will know this is done because the rice will make a clinking sound in the pan. Add the chicken broth to the pan first, then the tomato paste and finally the water. The rice should be fully submerged. Bring the liquid to a simmer, cover and reduce the heat slightly. Let the rice cook for 25-30 minutes or until done.
