Chicken Pot Pie

Ingredients
Frozen pie crust(2)3 chicken breasts1/2 cup flour12 oz. can evaporated fat free milk1 bag frozen mixed veggies(carrots, corn, green beans)1 tbsp olive oilsalt and pepper to taste
Directions
Set out pie crust to thaw out. Boil chicken(put chicken in cold water and bring to boil. Let boil for 7-8 minutes). Saute frozen veggies in olive oil until mostly cooked. Mix evaporated milk, flour, salt and pepper. Add to veggies and stir until thick. Shred chicken and add to veggie mixture. Pour in pie crust and use 2nd crust to cover. Bake at 400 for 25 minutes.

    This was a fairly simple & tasty rendition of chicken pot pie. I saved the water I boiled the chicken in and added back some of that liquid to the filling. As it turns out, I should have added it all back it to make the inside a little more creamy. It was a little thick, but still quite good. - 12/12/12
