Chicken Curry

Ingredients
2 lbs. boneless skinless chicken thighs1 large onion1/2 cup raisins1 Tbsp. extra virgin olive oil1 whole container 16 oz. lite sour cream1 Tbsp. curry powderdash of salt and pepper to taste3 cups prepared long grain brown rice
Directions
Put oil in a large skillet over med-hi heat.
When hot add the onions and raisins, sprinkle with some salt and pepper, and cook stirring occasionally until onions are translucent, about
5 minutes. Turn down to medium, sprinkle with half the curry powder, and cook for another minute or two.
Meanwhile, season chicken with salt, pepper, and the rest of the curry powder. Move onions to side of skillet, and add chicken in one layer. Cook for about 2-3 minutes on each side. Transfer chicken to plate. Add the sour cream and stir constantly over med-low heat until mixture is nice and thick. Return chicken to skillet and cook for about 10-15 minutes more, or until chicken is done, turning at least once.
Makes 6 servings.
Put each serving over 1/2 cup prepared brown rice. Serve with some roasted veggies on the side,and enjoy.
