Indian Curry Lentil Soup

Ingredients
1/2 c dry lentils1 tsp olive oil1 c vegetable broth1/2 c water1/2 small onion, chopped1 c chopped carrots1 c canned chopped tomatoes1/2 tsp indian curry powder2 tsp minced garlic
Directions
Heat olive oil in small pot til coats pan add onions and saute on medium heat til soft, add garlic and saute 1 minute more, add lentils and curry and saute another minute. Add remaining ingredients, bring to a boil then lower heat to low, cover and cook for aproximately one hour or until lentils and carrots are soft.

Serve with crusty bread or rice.
