Corn Chowder - Fannie Farmer Cookbook

Ingredients
2-inch cube salt pork (3 oz)1 onion, chopped fine4 med. potatoes, peeled and diced3 c. water2 c. corn kernels (frozen OK)3 c. milk (1% OK - will be thin)3 Tbsp. buttersalt to taste (1/2 tsp.)fresh ground pepper to taste (1/2 tsp)
Directions
Cook salt pork slowly in a deep pan until the fat has melted and the pieces are brown. Pour off all but 2 Tbsp. of fat. Add the onion and cook 5 min. Add the potatoes and water, cover, and cook until the potatoes are just tender. Add the corn and milk and cook 5 min. Before serving, add butter, salt and pepper and reheat. Serves 10.
