Wok-fried Shiitake Mushrooms

1 or 2 handfuls (about 1 cup) of sliced shiitke mushrooms1 TBSP sesame oil1 crushed garlic clove1 small chopped onion2 carrots, cut lengthwise and sliced at an angle2 TBSP of soy sauce2 cups of stir fry greens or kale, washed and ribboned
Heat a wok until searing hot
Add the sesame oil, onion, and garlic, and stir fry for about 1 minute.
Add the carrots, and stir fry until they are cooked to your preference.
Add soy sauce.
Add stir fry greens and mushrooms- stir fry for a couple of minutes.
Serve at once. Can be served over rice or asian noodles, or with meat, but not included in the calculations.
