Introduction

This is a delicious and vitamin packed pasta salad. A great summer dish that I often take to picnics. People always ask for this recipe and even my teenagers love it. This is a delicious and vitamin packed pasta salad. A great summer dish that I often take to picnics. People always ask for this recipe and even my teenagers love it.
Number of Servings: 12

Ingredients

    Dressing:
    1/2 cup peanut butter (smooth)
    1/4 cup soy sauce (low sodium)
    1/3 cup warm water
    2 tblsp. chopped fresh ginger
    1 medium clove garlic
    2 tblsp. white wine vinegar
    1 1/2 tsps. honey
    1 tsp. dried hot red pepper flakes

    * you can add a tblsp. of asian sesame oil to the dressing for taste, but it's still good without it (calories not included in the recipe).

    Noodle Salad:
    3/4 lb. linguine fini or spaghetti
    4 scallions, thinly sliced
    1 red & 1 yellow bell peppers cut into 1/8" thick strips
    1 cup of sliced carrots

    * sometimes I add extra firm cubed tofu and sometimes I add a couple tblsp. of sesame seeds. (calories not included in the recipe)

    Makes 12 1 cup servings

Directions

Cook the pasta until done, rinse in cold water. Add pasta to the noodle salad ingredients and toss.

Puree the dressing indgredients in the blender for 2 minutes, until smooth. Mix well with the noodle salad.
