Chicken Braised With Tomatoes & Olives

Ingredients
1/2 tsp ground black pepper1/4 tsp salt1 lb boneless skinless chicken breast or thighs1 tsp olive oil2 1/2 c thinly sliced onion2 garlic cloves, minced2 c chicken broth, divided1/4 c kalamata olives2 tsp balsamic vinegar14.5 oz can diced tomatoes1/4 c flat parsley, chopped2/3 c couscous
Directions
Sprinkle 1/4 tsp pepper and salt over chicken. Heat oil in a skillet coated with cooking spray over medium heat. Add chicken and cook 5 minutes on each side or until browned. Remove from pan and keep warm.

Add onion to pan and saute 5 minutes or until tender. Add garlic and saute another minute. Add 1/2 cup broth, olives, vinegar, and tomatoes. Return chicken to pan. Bring to a boil. Cover, reduce heat, and cook for 20 to 30 minutes or until chicken is cooked through.

Meanwhile, cook couscous according to directions using remaining chicken broth.

Stir remaining pepper and parsley into chicken and serve over couscous.
