Decadent Low(er)fat Chocolate Gelato

2.5 cups 2% milk3/4 cup sugar, divided1 cup unsweetened cocoa2 oz. bittersweet chocolate4 egg yolks2 tsp. vanilla extract
In 2 quart saucepan, heat milk and 1/2 cup of the sugar over medium-low heat until sugar dissolves and milk begins to simmer. Whisk in cocoa and chocolate until smooth and blended. Set aside to cool. In large mixer bowl, combine egg yolks and 1/4 cup sugar; beat with paddle attachment on high for 4 minutes or until thick and pale yellow. Reduce speed to low and stir in warm chocolate mixture (make sure mixer is running - you don't want scrambled eggs!) Once blended, put back into 2 quart saucepan, heat over medium-low heat until thickened (approximately 180 degrees if a candy thermometer is used). Do NOT allow it to boil! If desired, pass mixture through a sieve into a heat-proof bowl to ensure all is smooth. Add vanilla extract. Press plastic wrap against surface of mixture in the bowl to prevent air from being contact with the surface. Chill completely. Freeze in ice cream maker per manufacturer's instructions (mine says 30 minutes). Pour into freezer-proof container or individual containers, freeze at least two hours. Allow to soften slightly before serving. Makes 8 half-cup servings.
