Loose Cabbage Rolls - w/ Brown Rice & Chicken

Chicken Breast, no skin, 24 ounces Onions, raw, 1.5 cup, chopped Green Peppers (bell peppers), 0.5 cup, chopped Celery, raw, 1 stalk, large (11"-12" long) *Brown Rice, long grain, 2 cup Cabbage, fresh, 1 head, medium (about 5-3/4" dia) Tomato Sauce, 1.5 cup Pepper, black, 1.5 tbsp Salt, 1 tsp
Preheat oven to 350 degrees.
Shred the cabbage and chop the celery.
Saute the chicken, onion, peppers and celery.
Remove, drain and add rice, salt and pepper. (or use Mrs. Dash salt substitute to make it more sodium friendly)
Layer with shredded cabbage in a large casserole dish.
Pour tomato sauce (can also use salsa) over the entire cassarole.
Bake covered for about 1 1/2 hours.
