Quorn chicken piri piri wrap

Ingredients
Quorn fillets x 2Whole Wheat WrapAsparagus spears x 21/2 red pepper 1/2 red chilli2 tbspn Very Low Fat YoghurtPiri Piri seasoning sprinkle
Directions
Dry fry the asparagus, red pepper and chilli until soft. Cook quorn at the same time until turns brown. No oil needed if you use non stick pan.

Leave to cool. Once cool mix with yoghurt and piri piri seasoning.

And wrap...

    I think this is a good way to enhance quorn which can be bland. I experimented with different herbs e.g. fresh basil or corriander. The yoghurt stops it being dry. Very tasty. - 12/29/09
